Our Decaf coffee is a smooth house espresso made from beans grown by 65 small farm holders in Popayán, Cauca, Colombia. The beans are washed and decaffeinated using the sugar cane process. The region"s topography creates a perfect environment for exceptional coffee, resulting in a balanced cup profile with deep chocolatey and syrupy notes. The collaboration with Cofinet and the focus on quality encourage farmers to produce high-quality coffee beans. The decaffeination process involves using ethyl acetate produced in sugar cane refining, resulting in caffeine-free beans with the same moisture content as before. The ethyl acetate used in the process can be recycled, and the extracted caffeine is sold to other industries.
